  • 2 pounds of inside or outside skirt steak;
  • 2 large onions;
  • 2 large carrots;
  • 3 garlic cloves;
  • 1 salary stick;
  • 28 oz canned and peeled tomatoes;
  • Red wine;
  • Fresh thyme;
  • Kosher salt and freshly ground black pepper to taste;
  • Light olive oil (or any other oil with high smoke point).

Step 3: Preheat the skillet, and the oven

Preheat the cast-iron skillet until smoking hot. It will help to get that even brown crust on the skirt steak exterior. Preheat the oven to 275 degrees Fahrenheit.

Depending on the texture, either take it out or leave it to cook for a bit longer. Usually, at about the 3-hour mark, steak begins to break, becoming incredibly tender, while after 2 hours of slow cooking, the steak is still intact.

Step 7: Serve

Take the steak out of the oven and serve with your favorite sides. Mash potatoes or french fries are great with this dish.
